April 25, 2010 8:00 amI always thought “cuppings” were a painful treatment given to horses and infants, but it turns out to be what boutique coffee importers like Dallis in Ozone Park call their tastings. Though less well-known than Stumptown, Dallis brings in similar single-origin beans. I tried them right out of the roaster, but cuppings can be exhausting!

I set up a coffee tasting last month at my church and I wish I would have seen this video first. When we “broke the crust” we just went to taking the top off instead of pushing it aside like that. I can’t wait to try it again and maybe this time I wont get a bunch of grind in my spoon!!!
