August 1, 2012 8:45 pmWe all know my burger prejudices. Has to be plain, has to be a squishy bun, has to be salted….blah blah blah. I do believe it, but really, how tired is this puritanical prescription already? Even I’m sick of it. Which is why I was glad to find that I didn’t hate the Tuscan porkburger I ate at Rosemary’s. In fact, I sort of loved it.
No better way to eat a burger than with four or five people staring at you expectantly. You’re a pro!
But honestly Josh, was that bun too chewy? I have had a couple hamburgers that featured focaccia and they all were terrible.
Strange and awesome to see you enjoy what you’ve once called a “spiced grotesquery” burger. I am also a purist. I scold my guests when they ask for ketchup. At the risk of sounding like a total assbag, the question of whether a classic burger can be improved upon makes me think of the question of the artistic integrity and relevance of Bach variations. How do we appreciate, if at all, the Bach variations in respect to Bach’s original compositions? In a way nothing can beat original greatness. (Nobody can remake the Godfather “successfully”.) But after watching your video two ideas come to mind: (1) Any attempt at reinvention of something great pays homage to the fundamental integrity of the thing. And (2) any successful reinvention deepens our appreciation of the fundamental parts that make it up. (I hope Oz.tv is a safe place to wax philosophical about a burger. If not here, where?)
