Episode 10281:Alex Guarnaschelli and the Great Bronze Duck Press
August 23, 2012 9:09 amThe title pretty much says it all here….Alex Guarnaschelli of The Darby and Butter, as well as TV’s Chopped, will be cooking duck a la presse, or pressed duck. And pressed duck means using a special, ancient machine rarely seen in any modern kitchen. Luckily for us, the Maccioni family, of Le Cirque fame, leant us one. And we mean to use it!
They used a silver duck press just like this one at Alinea when I was there. It was right next to our table, and you could hear a wonderful crunch when they pressed down on the perfectly roasted duck. Dave Beran said they were testing it out for use in the (then) Escoffier menu at Next.
There should be a duck press in every home!
It’s obvious that you two have a hysterically fun relationship. Pressed duck from Alex and a whole roasted 1,000 pound steer from Pat – this is Meatlysium!
If I’m shot and killed by vegan terrorists on Randall’s Island … a.) Promise you’ll avenge my death and name next year’s event, and b.) I’ll proudly be able to say that my life is complete. Aside from not getting to see my children grown with families of their own and growing old with my wife (the latter being my #1 bucket list).
