I visited with Jake Dickson to talk about, and eat, his meat some months ago….this tasting was the result. You can see I was very tired by the end of it. But by God the work got done! Jake will be part of Meatopia, by the way, so expect to see at least some of his stuff there, in some form.

Josh, not for every episode, but sometimes, I wish you would go over your three minute limit. Especially when you are with a chef that has a lot of great stuff to say.

Interesting that serving meat has been outlawed in Canada for years because of the possible sanitary reasons…I remember always eating a steak on a ‘steak board’ which had a moat to hold in the juices… the good olden days.

If this is how these chefs plate their food for their guests I am sure it is a home run…to be served in dishes and pots is a fun way to eat and actually opens the appetite

Did you share your disdain for grass fed beef with Mr. Dickson? Or did you avoid that prickly subject? Does he know that you think “grass fed beef stinks like hot crap on ice” and that you repeatedly attempt to undermine the efforts, like those of Mr. Dickson, to promote meats from pastured animals with straw man arguments and sometimes ludicrous lies and disinformation? Stuff like:

“As a student and admirer of meat, nothing drives me crazier than the universal praise given grass-fed beef by various chefs and slow-food types.

Most grass-fed beef tastes worse than its corn-fed rivals. It tends to be dry, chewy, flavorless and has no more marbling than a block of tofu.

Moreover, the majority of grass-fed animals are raised in South America, where they are one of the culprits behind rain-forest erosion. Every year, vast tracts of forest are turned into grasslands to feed these “hooved locusts.” Depending on where it comes from, grass-fed beef may not be better for the environment than corn-fed.”

Cleevus, I have no idea what your comment means. Maybe a referenced to BSE, or other issues with confirment farming, which is, of course, not what Simon, nor myself, was talking about?
