Manhattan Chinatown is chockablock with Cantonese roast meats, but for my money, the best of the bunch is the venerable restaurant, on the corner of Baxter and Walker. Its bao are great, its duck is great, but what really puts a hop in my step is its char siu, so porky and dark and fatty. .

I believe Big Wong’s on 67 Mott St has the best Char Siu in Chinatown. They have a better roast. Plus you can tell the chef that you want them to chop a piece that is either more fatty, more lean, or half fatty/half lean. The best is to have the last one. A lean Char Siu tends to be drier since its at the ends. You want them to chop the succulent middle part of the char siu.

josh, i watch all of our videos with great interest. i am an expat NYer now living in Moscow, and your little films are like care packages from home.

this latest one really struck me. a guy who tells you this was the best $1 meal, and relates it to his own personal struggle in NYC is a guy I want to listen to. tweezer food has its place, but the right storefront in chinatown to duck into for a delicious morsel is a deeply important cultural, metropolitan service you are offering. it is indeed the greatest city in the world, when we see, smell and taste it through you.

and yes, when i die i may ask for my ashes to rest in a coffee can in Eisenbergs. cherry lime rickey and i;m in heaven.

For some strange reason The “dai bao” (with the egg/pork/random meat in it) is ridiculously popular among Filipinos. Most Cantonese ppl don’t really eat that. It’s hard to find a decent classic baked “char siu bao” nowadays, since the chatham sq restaurant closed down this summer =(. Maybe sun sai gai makes a good one.
