John Winterman, the dapper Maitre ‘D of Daniel, is just the man to ask if you have questions (and who doesn’t?) about the difficult matters of running a three-star restaurant.  I asked a few, including whether Madonna or Lady Gaga would get a table first. But there were some intelligent questions as well.

I was supremely impressed with this interview. Based on his responses, John Winterman seems to be elegant, diplomatic and incredibly dedicated to service. Wonderful to see a master talk about his craft.
