Jeremy Spector, the young chef from the East Village’s Brindle Room, has been around the block –he opened Employees Only, founded Dogmatic Dogs, worked at Vinegar Hill House. Now he has his own place and I like it a lot. This parmesan-crusted pork chop is one reason why.
